Frozen Choccy Coated Bananas

My obsession with frozen chocolate bananas began after my first trip to The Big Banana, Coffs Harbour NSW. At their cafe you can grab one of their famous chocolate coated bananas. It’s HUGE and ultra yummy. *Giggles

Damn you, The Big Banana!

Ever since, I’ve been trying to replicate this dessert. There is a real art to working with chocolate (tempering & not making a complete-utter-mess). So you'll be forgiven if it doesn't look anywhere near mine. The main thing is that it tastes OH so good!

The best part about this treat is that it's healthy (wink, wink) & you can coat with anything you like! Here, I've tried crushed peanuts & pumpkin seeds.

Perfect as a summer treat, or children’s party. Here’s my simple recipe to making your own frozen chocolate coated bananas at home:

  1. Line tray with baking paper.
  2. Insert a paddle pop stick into each piece of banana. Freeze for 15 minutes.
  3. Melt the chocolate with the coconut oil in a glass measuring cup. Heat in the microwave on medium (stir every 20 seconds) or in a half-full pan of simmering water (about 2 minutes). Stir until smooth.
  4. Pour melted chocolate onto bananas or use a rubber spatula to coat each one. Then, quickly decorate with your favourite topping.
  5. Place in the freezer until chocolate sets (around 2 hours).
Recipe Notes

You can make this ahead of time. Store in an airtight container then pop in the freezer for up to 1 week (if they last that long!).
